Daigi Pulao Recipe
Ingredients
Rice
Chicken
Oil
Yogurt
Vegetables
Ginger
Garlic
Onions
Tomatoes
Green Chillies
Spices
Salt
Black cardamom
Corriander seeds
Cumin seeds
Whole black pepper
Cinnamon sticks
Method
Step 1
Put chicken in a pot
Add all above mentioned spices
Add green chillies,half piece of ginger and some garlic cloves
Cut 2 onions in two two pieces and 3 tomatoes in 6 pieces and add in this pot
Now add water double the quantity of rice you are going to cook
I took two glass of rice so added 4 glass of water
Cover and let it cook for half an hour
After that remove all vegetables and solid spices with strainer and discard it
Separate yakhni and chicken
Step 2
For rice tarhka
Wash and soak rice in water till you are preparing tarhka
For rice
Heat oil in a pot
Add two onions and fry till it turned golden brown
Add 1 tomato,two green chillies and ginger garlic paste and fry
Add boiled chicken in this pot and fry for sometime
Add yogurt
Add hot spices powder,cumin seeds,and some bariani masala
Fry it for 10 minutes on medium flame
Then add yakhni in this pot and bring it to boil
When water starts boiling add rice and 2 3 drops of vinegar in it and let it cook on high flame till there is no sound of bubbles
When there is no sound of bubbles anymore cover and cook it for 5-10 minutes on low flame
Uncover and mix rice with light hands before serving
yummy daigi pulao is ready :)
You can serve it with raita + salad
